Our Extra Virgin Olive Oil Production

The production of our extra virgin olive oil stems from a deep commitment that combines tradition, sustainability, and a unique connection with the territory. Our olive trees are centuries-old and belong to rare, endangered varieties, carefully chosen to preserve the biodiversity and historical heritage of Liguria. These trees, often neglected by large producers due to their low yield and high alternation, are a treasure for us to protect and value.

The process begins long before the harvest, with meticulous attention to the maturation of the olives. Starting in February, we carry out precise pruning, followed by fertilization in spring and irrigation control during the summer months. In September, when the fruit reaches perfect ripeness, our operators handpick the olives with a respectful manual “picking” method, ensuring the well-being of the trees and the environment. The olives are immediately placed in plastic crates and milled within 24-48 hours in a cold-pressed continuous cycle mill, preserving all the organoleptic qualities of our oil.

Our olive groves are located on the characteristic Ligurian terraces, supported by dry stone walls, a traditional architectural feature that we strive to preserve. These terraces, entirely handmade, are a testament to heroic agriculture and a unique landscape we are committed to protecting. Managing an olive grove in this context is challenging and requires great dedication, but it is an essential part of our mission to safeguard the cultural and architectural roots of our territory.
