Our Saffron Production

Our first-quality saffron production is an ongoing project driven by a passion for excellence and a commitment to innovation in our region. We embarked on a challenging journey by transplanting Crocus sativus bulbs from San Gavino Monreale, a renowned area in Sardinia, to the Ligurian terrain. This was no easy feat due to the significant differences in soil and climate, but we believed that the unique scents of the Mediterranean scrub and our coastal hillsides would, over time, enhance the aroma of our saffron.

We meticulously manage every step of the process. The flowers are handpicked early in the morning at peak bloom to preserve the pistils’ freshness and integrity. We carefully select only the finest saffron threads, ensuring superior quality. The drying process is equally crucial: the pistils are naturally sun-dried, slightly moistened with our extra virgin olive oil, which enhances their organoleptic properties and imparts an intense, unique aroma.

Our Ligurian saffron has shown, season after season, that it is a winning choice thanks to the blend of traditional techniques and meticulous care at every stage of production. Each thread represents the result of a deep commitment and a strong connection to the land, delivering an unparalleled product to your table.
